Ok, i don't know if this is a bug, but it sure looks a bit odd to me.
Guy was suppose to wear a plate armor, but as i look his inventory it states he use plate and chainmail.

You can also play silly buggers with shields in adventurer mode - pick up a shield, it goes into your pack. Take the shield out of the pack, it goes into your hand...even if that hand is already occupied. I know some people abuse this to equip 300+ shields, which lets them train their adventurers up quickly for tackling difficult enemies (e.g. bronze collossi or custom megabeasts).

Plate and chainmail is intentional.  In fact, you can even have plate and THREE chainmails, although I haven't found a reliable way to do this in fortress mode.

From what I've heard only one of them matters, though that may be weapons.

Yeah, you could use only the first weapon you equipped.
However all your armor and shield stack.

And using chain and platemail isn't that unrealistic.

Yeah, Chainmail inside, the Platemail outside. make resistance again sword,spear,arrow, even mace (but not hammer, it will destroy the plate)

I think its normal that at least some pieces of plate armor have chain under it to cover the joints (think armpit and neck)
