I just found this:

If you place a door like so:

X = unmined wall
. = mined space
D = door
+ = spot to put the door

.D.
XX+
XX.


..it'll automatically smooth the wall that I bolded.

Also works with floodgates and that annoying, unreachable corner of a room when the two adjoining sides are smoothed.
