Is it possible to add in the tag [SPECIALATTACK_INJECT_EXTRACT:50:100] to weapons? Say for like, poison arrows or such?

I would say probably not.  All the monsters with that have it have extra information just for the extract itself.  And those are creature tokens not weapon ones.

Even if it worked it would likely create a null extract that actually does nothing.

Spiffy idea though.
