Military woes

Where are the buttons to assign food / drink?
Where are the buttons to assign bolts?

The former was essential to work around the rotting food in backpacks bug (the other workaround is to meticulously keep scanning for backpacks and forbidding them all), the latter, well, my crossbowdwarf has a crossbow equipped, and a quiver. The quiver is empty, despite me having bone bolts and some bronze bolts dropped by a dead monster hunter (no, they are not forbidden). He just won't grab any.

Also, I have an archery range and I have a barracks. My crossbowdwarf military commander is happily doing combat drills in the barracks, but not touching bolts, nor practicing archery. His squad is allowed to train in the barracks as well as in the archery range. He has a staggered training schedule.
His uniform is set to 'archer'. Drafting / stationing him also does not make him pick up bolts.

EDIT: additional info; if I disallow access to the barracks, and only give him access to the archery range, he just reverts to civilian duty even though he is on training schedule. Even ranged dwarves need a barracks assigned to even be considered for training, but unfortunatly, this makes them train in said barracks instead of in the archery range.

Setting a custom uniform for crossbow dorfs is bugged.

Create the uniform (including a crossbow).
Delete the squad
Form a new squad and select the custom uniform as it's base.
Dwarves will now pick up bolts properly.

Bolts might sometimes still be getting stuck in bins so best (as in previous versions) to make your bolts pile without. (This might be what's happening for you, as Archer uniform Just Works usually).

Dorfs will wait a bit before stocking up on bolts. And, as in previous versions, it'll take some time before they start to spend time at the range rather than doing basic training in the barracks.


Stuff you can't do in 50.x:

Assign a certain type of bolts for training and another for combat (real shame that Toady doesn't acknowledge that his fairly recent fix for this worked perfectly and he wants to make a whole new system rather than using the old one).

Assign food in backpacks (as you noted).

Assign a civilian alert.

Create uniforms in advance (such a pita, this used to be the first thing I'd do on starting a new game, just run the uniform macro).

Hmm I suppose I'll try again.. I might have swapped between custom and archer uniform before settling on archer, that must have bugged it out then.

It's not a bins issue in any case. I never use bins for anything at all. Quantum stockpiles for everything. I never even produce a single bin in my forts, and take care not to import them either.

Probably the uniform bug then. That's workable enough. I've got custom uniformed, happy dorfs pinging away at their targets in between sessions of learning how to bite one another, so it can be done. :)

Oh, except the poor chap with a bow who insists on stocking up on bolts. Not sure anything can be done for him...
