I can't find a way to, but I'm not sure if this is new or a pre-existing bug, because I never used clay before.

According to the wiki, it should be possible (at least in 0.47.05).  Due you have a kiln or magma kiln?

Yeah I can order statues made, there’s just no option to specify the image. I also ordered rock and clay statues through the manager and there is no icon to specify the image FOR the clay, but there an icon for the rock. I was wondering if it was an oversight because the icon is called something like “specify material” but once inside you can also choose the image.

I don't know about the Steam version, but it's not possible in 0.47.xx or earlier.

Pottery stuff are raw defined reactions and you can't specify the image in those (e.g., if you make a custom 'make wood statue' reaction you won't be able to define what it'll depict), afaik.
