This video series is the most up to date that I know of. The wiki has a quick start guide and a probably out of date list of tutorials

First of all, welcome! It's always great to see a new face around here nowadays!

It is actually true that DF is best played, at least at first, with the Dwarf Fortress Wiki open on either a second monitor, or somewhere in the background. So that you can hit spacebar at any time to pause the game and read up on any aspect of the game that you might be confused about. The wiki contains everything a new player might need as a link on the front page. Also on the wiki is this nifty flowchart that can help you set up a fortress.

And yeah, you might wanna watch some video tutorials, or just watch some general gameplay of Dwarf Fortress. I reccomend Kruggsmash, he also has a guide for fortress mode, though it's a little old now, not a whole lot has changed since the version it was made on. But to me, in the end before playing my first fortress, i found that having watched general gameplay helped me more than any tutorial; the concepts of building a fortress proved more important than the specific button presses which go into it, but it's up to the individual.

Also, it is guaranteed your first fortress will fail spectacularly. Don't lose heart, the motto of DF after all is "Losing is Fun". :P

A couple people I know prefer tile sets to the standard ASCII graphics.  Unfortunately, they did not know about the Lazy Newb Pack which makes it easy to switch between tile sets, and also adjust commonly adjusted game settings otherwise only accessible through the init.txt file.  It also includes some other popular 3rd party mods and bug fixes. 

I've been playing for a little while now, and still find myself with the Wiki open more often than not.  It has a lot of very useful information beyond *just* how to play.  Like not just how to dig and designate a bedroom, but a thorough discussion with pictures of various bedroom design philosophies and examples.  It also has I've been using it lately to look up butchering yields of various giant animals the elves bring to trade with the goal of increasing the animal husbandry yields.  There is also a list of Megaprojects to inspire you if simply surviving has gotten too easy.  But there's no need to min/max things.  The fun for me is in the unexpected challenges that I could have been more prepared to handle, and figuring out ways to do better next time.  Along those same lines, playing until the bitter end of the fort (when the game forces you to quit) is generally where a lot of good stories are made.  Also, there's the chance of an unexpectedly large migrant wave that could completely turn things back around to your favor.  It's more satisfying to have a population of 100 dwarves when there were previously dark times where only a handful were all that survived a siege or werebeast attack than it is to just keep restarting every time something doesn't go exactly as planned.

There are also a lot of great threads in the forums, some buries several pages deep, that are definitely worth a read.  One of the classics being Archcrystal

Welcome! Glad to have you! We’re always happy to help here on the forum.

My personal recommendation is to first edit the config file d_init.txt and change [VARIED_GROUND_TILES:YES] to [VARIED_GROUND_TILES:NO]. That goes a long way towards making the ASCII art appreciable. Also, I recommend installing DFHack if not using Dwarf Therapist, as DFHack comes with a number of UI bug fixes to make it a little easier to navigate the menus.

Next, I’d recommend setting small goals for your first few forts, like create a working farm.

And remember, “losing is fun”, or in other words, embrace failure as a fun spectacle, not something to be avoided.
