I want to make my playthrough extra difficult by doing the most undwarfy things you can (as much as I can get away with it) and make most of the income from farming. Selling crops is easy, but I have no idea how do you sell livestock after you breed them.

Never tried it myself, but I think you need to cage them and then sell the cage with the animal inside.

Also remember you don't have to sell the livestock on the hoof: You could slaughter the animal then sell the results. You don't need to process the results, but it helps. You can sell the skin either cured or uncured, the meat either cooked and preserved in a pot, or in unrefridgerated globs, the fat rendered into tallow, the bones carved into remarkable and bizarre rings of power, or still bleeding....

Yeah, okay, perhaps selling your livestock on the hoof (or rather, in the cage) isn't a terrible plan. You can put the cage storage area right next to the trade depot to make it faster to get the cages full of puppies, kittens, and elephants into the depot when the time comes. Just make sure they don't wait too long, and are well tamed.

All breeding operations I have run failed before they scaled properly. I would love to see someone with a 20 or 30 year old livestock fortress.

cages are necessary for saving on FPS, due to wander pathing. some animals are so uneconomical in their growth rate there is no point in raising them, at least in vanilla.

honestly, modding growth rates to make it more game-y is something I would recommend. also, raising the embark points to a large value and bringing a great herd at the start would make the growth so much more playable.

I've sold a few animals this way and vcd14 pretty much covered it.  To sum up:

• craft or purchase cages to use, made from light materials for easy hauling (but not wood if trading to elves)
• construct cages close to the depot
• assign the tame or trained animals you want to sell to the cages (making sure not to move grazing animals until close to trading time so they won't starve)
• deconstruct the cages once the animals are inside (ensuring that any available animal stockpiles are close by so they won't be hauled further away once deconstructed, or just don't have any available animal stockpiles)
• select the caged animals from the trading menu to be hauled to the depot

The value of the animals is pretty modest.  Well crafted cages can actually be worth more than the animal inside.
