It goes into a bars/blocks stockpile.  However, I haven't been able to find an option to specifically enable or disable charcoal in a bars/blocks stockpile -- my guess is that it is treated as "coal", so wherever you keep coal is where charcoal is also brought, and vice versa.

I've never had a big enough metalworking industry to test this out, however (charcoal does get put in a bars/blocks stockpile, I guarantee, but I have no idea whether it gets put in with coal if you make a custom stockpile that only accepts coal).  Someone who's a little less of a casual gamer might be able to help you out there.

Yeah all my potash and charcoal was going into blocks but i couldn't find a place to enable it. I want my potash to go by my farm but then it ends up being used for blocks and such.

Potash does have an option in the list, about two or three places from the bottom.  I'm not running DF right now (got bored of my food-consumption-rate trial) so I can't check without booting it up, and I was about to play EV Nova instead. ;-)

Sorry for reviving this thread, but there was no definitve answer and this thread shows up quite high in search engine.

I confirm that in latest version 0.47, it's sufficient to create a stockpile with only "Coal" option enabled (in Bars - other material) to store charcoal (from wood) and refined coal (from lignite / bituminous coal).

It's also indicated in the wiki: http://dwarffortresswiki.org/index.php/23a:Charcoal

Potash has also it's own entry in same category, just under coal.

That's the wrong wiki page to reference, since it's for version 0.23.130.23a (which was actually the current version back when this thread was originally posted over 13 years ago).

The page for the current version as of right now is as follows:
