In vanilla DF, you need to set up a separate still.
Hover over still with "q".
Press "P" for workshop profile, to access preferences menu for the still.
Left arrow to move to work orders screen.
There you can set order for automatic brewing like in manager.
It works, if you set up earlier links from plump helmets stockpile and from empty barrels stockpile to the still first.
You can rename still to "Dwarven wine", so easier to read in stockpiles, what they are linked to.

So much confusion on easiest way (and probably only real way) to do without dfhack.

Build multiple stills.  Assign multiple stockpiles next to each still.  Each stockpile only accepts 1 type of plant. 


Still struggling with shortages of drinks .. dehydraded dorfs
Its maybe not structural the thirst, so first checking the location of a thirsty dorf
But setting up the stills as suggested should be better.

Maybe it has to with the number of guests ..its now 62 vistors and they drink all  :D 
Note: very quiet with invaders, it going now to his 5th year the fortress and surrounded by friendly civilizations that helps

Make underground 6 farms. Each size 5x3.
Make seed stockpile by each. Each size 1x3.
Build 4 stills (somewhere else, above ground fortress maybe?). Make plant stockpile by each and link each to each still. Each size 6x3.
Make 2 additional stockpiles for dimple cups and quarry bushes.

My farm plots my scheme is:
1.Sweed Pod,Cave Wheat,Cave Wheat,Dimple Cup
2.Sweed Pod,Cave Wheat,Cave Wheat,Dimple Cup
3.Sweed Pod,Pig Tail,Pig Tail,Dimple Cup
4.Sweed Pod,Pig Tail,Pig Tail,Dimple Cup
5.Quarry Bush,Quarry Bush,Quarry Bush,Plump Helmet
6.Quarry Bush,Plump Helmet,Plump Helmet,Plump Helmet

You could produce log->ash->potash to make harvest larger.
You will get enough stuff to eat and to drink for 200 Dwarves with just 3-4 growers.
Enable harvesting only for growers in o-menu, so they become legendary in 2-3 years.

I can do a little renovation on the current drink production
Could be the solution for the ongoing diminising of the dorfs?   

Note: don't have all 6 cave seeds at my disposal now anymore, only 4 of them.

This fortress is not long surviving anymore ?, although there are 10 dorfs left at the right side
of the happiness monitor and 26 dorfs left at the left side of the health monitor
But no brewers anymore ...and 4 drinks left (the longest survinging fortress for 5 years without invaders )
Do have still 3 estatic dorfs , they can start brewing with some others ..for surviving

It doesn't matter for farm plots, if you have seeds or not.
If you get some seeds (from merchant caravan?), then the farm plots will start producing the plants.
Crucial is to secure the food production area, which in some places can be an issue.
This is after all 6 farm plots of sizes 3x5.
Securing 4 potash bars for each farm plot for one season fertilizing can be sometimes an issue too.
Also, do not forget to disable all barrels/pots from 1x3 seeds stockpile (q, hover over seed stockpile, E).

Of course the 3x6 food stockpile for one plant, which is harvested, have to be the only one. :)
So other food stockpiles have to have this plant disabled from allowing. (q, hover over stockpile and s to access its settings)
Do not worry. With 18 barrels/pots the 3x6 food stockpile can easily keep about 1000+ plants.
