success chance based on whether it’s relatively big enough for you to ride, and if it’s not tame for riding purposes, then also your rider skill.  if it’s not tame for riding, mounting it might make it hostile, and a hostile mounted creature might try to throw you off (like a horse) or otherwise attack in whichever ways its limbs allow.  you can attack a creature you’re riding (with the usual confirmation prompt if it isn’t already hostile)

Mounting a giant and other such fun (including being eaten and having to fight your way out of a stomach, as I recall) is in the Dev notes somewhere as a goal, so that will be fun when it gets done.
