Is it possible beast hunters are looking for animal people of the more savage/evil/wild variety rather than the monsters in the caverns? And it’s been a while since I have hit the caverns so do you get animal people in the caverns?
It's just a job type. Their description tells you what they want to do (slay monsters, relax, worship, etc).

I haven't seen any cavern animal people in quite a while. And I don't think dwarfs "hunt" animal people. This is against dwarven ethics.

Visitors aren't dwarves most of the time.

Although, wild animal people are basically seen as animals in the current version, and dwarves do hunt (they're happy with making trophies out of animals) so I don't think it's against their ethics.

Nothing in the release notes indicates "cavern civs" have been changed (they're still there as entities in the raws). Also, cavern civ members are supposedly automatically hostile to dorfs, although they tended to simply ignore dorfs in 0.44.12 (last time I played). While dorfs aren't against killing enemies, and you can order militia to kill animal people (cavern or surface), you still can't make things out of their bones due to them being sapients (well, unless things have changed, you can, provided they're reanimated first and you get bone through "natural" butchering, but that method also allows you to craft things out of dwarven bone).

I've tried, and indeed the cavern civs do have immunity as you'll need to run a anti dead_dwarf=false DFhack script to override ethics and let your race of sentient eaters devour and use their proceeds. But they probably attack the monster-hunter on sight anyway if predisposed to being hostile, so you would need to regard who started the conflict.

Trolls, Troglodytes & Cavern Races (i got reptile-men in my example where i tried this) are all free-lunch and ample sources of bones, tusks and totems with the right ethics (if it was working properly)

Ah, hunt and eat. Yeah, OK. Just killing for sport (and trophies) should be fine.
Eating sapients is bugged and impossible without Dfhack right now regardless of ethics.

Well all corpses are your property anyway, its not like the monster hunter claims the corpse they killed, drags it to a workshop and makes a quick few trinkets out of it. Not strictly killing and eating, im just saying that butchering them to get inside to claim the bones for trophies even i that's all you're interested in can't really be bypassed without leaving a lot of prepared meat out to rot.

If things were a lot cleaner in regards to a beef-cow map of which bones & meat you want as a selective choice then it'd make a lot more game logic sense.

The best use of monster slayers is an easy source of fresh blood for your vampire fort.

Monster hunters go and get killed by forgotten beasts so you can see how dangerous they are.  If they manage to cause some damage before getting killed, you can probably take the FB.
