How do I exile a dwarf to one of my holdings?

v-p-send away (e I think). Then select where from a menu, choose between "expel" and whatever holdings your fortress has).
Note that you can't send away nobles and expelled dwarves will take their immediate family and pets with them (they'll appear on the expel screen before you select final confirmation).

Also, a bug means that the check which is meant to cover babies being taken away on raids is too robust so you'll occasionally get the message "cannot expel, child not present". The child in question being off in a dark pits dungeon somewhere (or acting noble of another site). Nothing you can do about that right now, just gotta find a new method of removing the stressed dwarf.

That works.  I think what threw me off before is that I was trying v then u (instead of zooming to the dorf).
