Looted beakdogs from a goblin pit.

I sent out a raid to a goblin pit and my squad returned with 5 beakdogs. They are listed as tame and haven't caused any problems. Will they attack goblins and other enemy beakdogs? How exactly do captured livestock work?

They're yours now AFAIK and should behave like any tame creatures you have.
They should defend themselves from enemy attacks, not sure if they would actively attack like war dogs.

As mentioned, they're tame and don't have any hidden loyalty to goblins. If they can be war trained (I haven't checked if they can be) they may be used as war dogs (after training, of course), but otherwise they're just like any other tame animal, which means they'll try to flee, attack, or defend themselves as per their personality when under threat.

They can't be war trained by dwarves but they are good for a food and resource industry. They'll require a nest box if you want to breed them.
