The troll takes the Elite Marksdwarf down by the tongue with The troll's right upper arm!

So.... how do you stop your dwarves from sticking out their tongues during combat so they dont get grabbed by a trolls biceps.

Bonus question: When a troll is wearing a large troll fur cap, does that mean he just braided his hair or did he pull out his hair, turn it into a wig then put it back on his head?

Not much you can do about the bizarre and hilarious wrestling moves, I'm afraid, short of modding body parts out or removing graspers and I think joints.  I'm pretty sure I saw someone initiate a grapple with a single tooth once.  Or maybe it was someone grappling someone's tooth with their leg or something like that.

Bonus question: The goblins sheared his fur, made him a nice cap out of it and then put it on his head.

In adventure mode, you can grab someone by the eye with your leg and throw them a few meters.

Things like that turn DF from a conceptually interesting but unfinished game into a hilarious game.
