Because I see most YouTubers just give every dwarf one point in one or 2 things, why?

Every point you don't spend on skills can be spent on bringing items. Personally I don't spend points on skills at all, since most of them level up reasonably quickly anyway, but if you intend to embark to see immediate combat combat skill expenditure makes sense.
I use my points mostly for animals.

More points to spend on supplies and animals. All skills can be acquired "on the job" later (though a few are much more time-intensive than the rest).

A single point is enough to automatically enable the associated labors on embark, so it isn't necessary to manually assign those labors after arrival.

I always put points into swimming and dodging. It's just a good idea.
