So how do I force my hunters to hunt???

There are several ways, but the simplest in my opinion is to build a butcher shop and give it the command to "Capture live land animal".

Take away their ers.

Enable hunt.
Ensure available crossbow, quiver, bolts.
Wait for wildlife.

Might want to disable other labours to speed things up, but they'll get out there automatically once they have their equipment sorted.

Hm, would walling them in near the vermin and waiting for them to start starving also work?

If you mean vermin, that has been covered, except for the fact that the "capture live land animal" job requires the trapping labor. Cage traps are required for capturing the larger animals (cats, lions, carp, etc).

If you mean animals like lions, however, you may need to go to the military screen and assign bolts to hunters on the ammunition tab (m -> f), which will eliminate any issues from them not picking up ammo. They need quivers and crossbows as well.
