Is this even possible? Whenever I try to do this all I get is "Need drink/water area" errors.

I never had any problems with catching live fish and never seen that message. What you need  is just an empty animal trap, a fishery (to start the job) and a dwarf with fishing turn on. What then should happen is that the dwarf takes the trap, moves to some water, catches a fish, leaves the trap + fish at the waterside and some other dwarf with animal hauling on carries the fish back to the animal stockpile. As soon as the fish sits on the stockpile you can assign him from the [q] menu of an aquarium or pond.
Have you declared an animal stockpile and checked wether all involved components have a free way to the cave or outside river?

Ah, that's the problem. I didn't have an animal stockpile.    :o

Edit: nope, still getting the same errors...

Not really, no. About 50 tiles from the underground river.
