not quite understand dwarves thoughts.

My carpenter is unhappy again! He is under great stress, but I'm not sure what exactly he is worrying about.

being unable to acquire something What does he want?

being unable to practice a martial art Should I throw him to militia?

considering the scarcity of cages and chains His regular route is far away from my jail room. Should I dump the cages enemies and animal men into magma so that my dwarves won't see them suffering?

being away from friends for too long The inn is always full of human bards and my stupid dwarves listening. How could he feel loneliness?

Lack of cages and chains is a thought I've only seen on Sheriffs/Guard Captains, and it means you have none/very few chains and cages marked to be used for justice. Is your carpenter the Sheriff?

Acquire something relates to wanting to claim trinkets. Cranking out some crafts and leaving them lying around should fix it.

A season training in a reserve squad should satisfy martial needs for a while.

It's possible he's either too dumb or too busy to Socialise! at the tavern. Bugs can cause dwarves to miss family members who aren't living at the fort, but I don't think that can happen for friends.

I've seen it said trinkets tend to be claimed only by a dorfs hauling them, so the idea to have two stockpiles feeding each other with trinkets back and forth for a while has been proposed.

The martial arts need is satisfied by increasing a martial arts skill level, so yes, militia training until a skill is increased should do the trick.

Dorfs are totally incapable of realizing the relation between making friends and the (logically) subsequent being with friends. The same goes for the relation between making moves to get a friend->lover->spouse and the satisfaction of the need to be with family (especially glaring with void dorfs who have never had any family, including parents).
Dorfs are also totally inept at general socializing, being (far) more likely to recognize the beard of the visitor who came in last month than those of the strangers who only have lived in the adjacent rooms for a couple of decades. Even if they happen to have made friends, they may just as well socialize with a visitor than the friend who is socializing with another visitor at the same time in the same tavern, while complaining bitterly about the unmet need to be with friends.

That is a d0rf determined to be miserable. I'd leave him be, no dwarf is truly irreplacable.

If he is the Sheriff, it's a good idea to build a prison for the fortress, or appoint someone else. At least the bad jail thought might go away.

You need 3 stockpiles, I've read that only two wont work.
I would use 4 stockpiles feeding in a circle, each on a room, and put masterwork doors and furniture betwen the rooms. they'll get extra happy thoughts that way.
