Fighting Game Help?

So I'm working on a thing for LARPing where my character's bringing back the ancient and noble art of Cockatrice fighting - except that cockatrices are extinct.  Not a problem!  We're going to make some big puppets and have people "fight" them.  The thing is, my character's a gambler who runs an actual cock ring, so there still needs to be a competitive and/or chance based element in order to take bets.

So, can I have the aid of the Twelfth Bay in creating a "fighting game" to go alongside this?  It has to be done entirely with physical items, but dice, cards etc. are all game.  Any ideas?

Interesting.  So to pick a starting point, let's make some basic rules, parameters, limitations, brain storming, ideas, etc.

1. Game play. Describe in layman's terms how you forsee a game goes.
Something like, "A cockatrice enters the arena facing 1, 2, 3, or a dozen knights?" How about we start with 1 knight.

2. Space.  So a cockatrice occupies how large of a space.  How large of a space will a knight occupy relative to the cockatrice?

3. Movement. Given a "chunk" of time, how much can those in the arena move?  How far a distance can they travel given a chunk of time?  How many actions can they do given this chunk of time?

4. It's a fighting game.  The default indicator of a winner is health points of the enemy goes to zero.  Determine how much health each participant in the arena. 

5. Damage.  Given the actions and health, how much damage can participants do to each other?

I think those will be good starting points.  The think how would you simulate this fight.  Turn based? Initiative based? Action points based? skill based? real time based? Roll a die based?

Now THIS is something I'll need to remember. Since several of my game ideas, a few I can actually pull off, relies on me knowing martial arts... but frankly I don't.
