I have a training center set up, but I see no option anywhere how to train my dogs to be war dogs/hunting dogs. I also have an animal trainer but I have no clue how to get these dogs to actually do anything besides run around being useless.

go to z->Animals, select the animal and hit "w" for war training or "h" for hunting training.

This is also where you assign trainers to captured animals to tame them.
