So, I'm making an aquarium for my dwarves, but my dwarves keep canceling the job: needs drink/water area. I have a trap, obviously, but what the hell is going on?

You've dug a roomful of filled water channels and assigned them as a pool?  I have to ask, since you didn't explicitly state it. =)

I've never been able to catch a live fish and assign it to a pond. Every time I add the job, someone grabs the trap and stands next to the cave river like they're doing the job. Then I check a couple of minutes later, and either they've dropped the (empty) trap to do something else, or the trap is back in its stockpile, empty.

Maybe I was overfishing the river or something.

The only "fish" I've ever been able to catch were lobsters and turtles.  In order to get lobsters, you have to build the traps in the cave rivers and bait them with meat/fish, and for turtles you have to "catch live fish" and place your animal trap stockpiles right next to the outdoor ponds.
