The first thing is to get your dorfs to collect the bodies. If I understand it correctly, you need to change the 'o'rders-'r'efuse setting to collect refuse outside, and you need to have a refuse stockpile. Once the bodies have been hauled to the stockpile they can be butchered, normally through an automatic (auto butcher setting, on by default) order added to the Butcher's Workshop, but otherwise through a manual order. Obviously, you also need to have a dorf with the Butcher labor enabled and not caught up in other work. Once the bodies start to rot it's too late. I assume you already know you also need a Tanner's Workshop and a Tanner to process the hides produced (and do that before THEY rot).

And a Cook and Kitchen to process the fat into tallow, another food source.

Also under {o}rders, make sure "Dwarves save corpses" (rather than "dump corpses" - this puts them into a stockpile (near your Butcher workshop) rather than a garbage zone, and do it with higher priority.

If you've done all that and dwarves are hauling other stuff, then turn off all but "refuse hauling" on some - it's often low priority, so needs some encouragement.
