The elves will tell you exactly how many trees is too many, I find it's usually 100 trees. I find so long as I'm careful not to cut as many in the year in question, they're fine. Trees in the underground don't appear to make as many logs as trees on the surface, so if I need to cut, I cut on the surface for that year.
I don't know why people don't like elves, they bring me bears to train for war, camels for milk, and other exotic things, like persimmons. They make short jokes though, which are a bit annoying.

You can try to stretch the arrow resources marginally by having your archery targets wide apart, surrounded by trenches that run behind the targets as well as up to the archers. That way most arrows that miss the target would fall into the trenches and be recoverable. The targets should be fairly far away to increase the miss chance. However, I think these arrows are doomed to forever remain single, never to be stacked again.

I do, I made the drop area another ammo stockpile so they pick up directly from there as soon as I claim the forbidden arrows.  Still, even with a somewhat long shooting range (16 tiles distance) for it being indoor, dwarves tend to hit the target most of the time long before they are halfway into the training. But I have an idea ...

I don't consider puns at your expense to be jokes. Apart from animals, they don't have anything useful to trade, although you can buy some fruit from them, and I've bought cages just to get something back for the mounds of worn clothes I palm off to them. If they could sell you bolts rather than arrows, that would at least be of some use. And finally, elves come puffed up making demands, but make no effort whatsoever to return any favors. Basically, they behave like a bunch of pampered, useless nobles (although, to be fair, my dwarven nobles are actually doing their share of the work).

Ny experience is that the elven starting position is always exactly 100 trees. The agreement thereafter has landed between 114 and 132, I think. The final number is probably random based on some negotiation skill, I'd guess.

yea I think they are intentionally obnoxious so you will want to kill them.

This fortress is in a poor state, or I would just kill the diplomat.

They use magic to grow stuff on trees. I mean, even without all the tree humper jokes, they have every reason to protect trees. It's the difference between making stuff now at the expense of a long term economy and waiting for stuff to grow and fall so you can maintain sustainable growth.

It really is a war of ideology, since us dwarf players use stone and metal and burn trees while the elves grow everything they need in nature and, honestly, wouldn't even need an army at all if other peoples weren't hostile. They don't need to hunt, just build cage traps of wood and slaughter the captive animals. If you modded in a factory tree that dropped woodfruit, and modded in a workshop that could convert those woodfruits into other objects, you'd be able to play the game as elves without too much problem.

And the fact that elves have magic and whatnot does not make them morally superior to give them the right to boss around their neighbors. The dwarvern usage of trees IS sustainable, as trees regrow. Likewise, dwaves can produce infinite amounts of obsidian, glass, and clay.

I have no intention to show up in their home to tell them how to run things, with threat of attack otherwise, and would prefer them to be good neighbors too.

Elves don't understand manners or being good neighbors, they just know that dwarves aren't buying their wood, so they want to limit your sources so you will

They don't currently do a good job of limiting your sources. 100 trees is more than enough in a given year, especially if you buy coal and other wood-based products off the other caravans. Besides, we DO buy their animals, which are far more valuable than wood. Since they don't get attacked by animals, it's not nearly as difficult for them to capture and train creatures for sale. It's a better niche than wood.

Also, it's a game. Who cares about moral superiority? Dwarves and Elves usually have wars and vitriolic friendships. The elves' attitude in this game is just a reflection of the fantasy stereotype of elves vs. dwarves.
