I wouldn't mind if DF allowed a bit
more science :> A functionality update to catapults would be intense, along with some attention to all DF player's sekret favurite thang: Weaponization.
Blood/venom barrel functionality for dumping those liquids, breaking or shattering the barrel by dropping or catapulting, and dipping piercing weaponry to apply temporary effects, and functionality for creating a 7/7 deep pool of something besides lava or water..
For catapults, the ability to launch furniture, corpses, cages, magma, even living dwarves and other animals.. It'd be nice if they could fire objects in actual arcs over walls, even if it broke their indoor functionality..
Weaponized bees (including catapulting hives), the ability to have a dwarf set fire to a targeted square, some other things I can't remember.. Explosives! Why no explosives yet?? I'm assuming its either not "the dwarven way", or some problem with the way DF works.. Seems like with the cave-in function + the smoke effect from dust/miasma + levers + metal barrels = explosives? Toss in some powdered lignite/bituminous/anthracite and we should be good to go (complete with highly dangerous stockpiles of explosive powder and/or pre-made bombs..)

Or, if DF already has saltpeter and sulfer we could make good old-fashioned gunpowder.. but never for guns! I'm not even sure what to think about pirate-style cannons.. Functionally identical to a ballista, just more deadly.. Anyway, sounds like you'd be able to build a hollow 3x3 "gun barrel" type structure out of strong metal, seal one end and pack it with gunpowder and stock stone in front of it for a dwarf-built cannon..
I'm sure I missed plenty of good stuff, and am overall uninformed about Toady's future plans :> He's got a pretty detailed list of future features already cooked up, so half the time I just assume
everything is already on it..
