Mine track query

My first venture into minecarts this morning.

I want to run a cart from the surface down two z-levels to my initial starting point.  On the surface I see I have to construct the track so no problem there.

On the starting point (two levels down) I have a room cleared out for my wood stockpile and I've left stone walls in the middle of the room to carve track into.

What I can't seem to figure out is...how to I get my track to go down the two z-levels to connect with the second stockroom?

Triple check your track-ramps.  Make sure there is a wall adjacent to the ramp so that the ramp is properly "supported", or it will be unusable.  Make sure the track direction indicators are correct on the ramp itself AND on the tiles adjacent to the ramp on both the upper and lower Z-levels.  It's extremely easy to screw this up (as I have learned).

If everything's underground, then what I discovered works best is to do the d T track-carving starting from the ramp and moving toward the rest of the track -- and doing this in both directions!  One designation from the bottom of the ramp to the track leading away from it, and then a second designation from the bottom of the ramp in the direction of the track that leads toward it on the upper level, even though you are actually laying the designation on the lower level.  (Because reasons.)

Can't figure this out for multiple levels but I think I have it working on a single level.  Also experimenting with a dump shaft.  Just need the tracks finished to see if they work.

Is there a way to set for a "Push on Full cart" but only when you manually set it to push?  If my stockpile at the dump end is full, I don't want the cart to keep getting filled and pushed.

Also, what triggers dwarfs to start filling up the carts?  I've got two cart trails lined up and built completely, have a cart on the track.  Followed the wiki and have a start and stop point on each path.  One for wood outside to a dump pit down into a stockpile and the other for stone inside from a stockpile to a smaller stockpile near my stone workshops.  The "V" is green showing the cart is placed on the tracks.  Set to push on full.  Dump direction is right to get into the end point wanted.  Showing 0% though for both.  Yes they are busy but currently 3 idlers and all three have wood hauling and stone hauling turned on.  Oh, and Push Vehicle is also on.

* Is there another category to tick off to trigger filling carts (maybe it's not actually 'Hauling')?

OK, for benefit of anyone else having issues:
I had everything set correctly, but you still have to go into the stockpile (from the hauling screens) and then select the items you want moved.  I assumed it was already set that way since it was set in the stockpile itself...but it's not.  Once I triggered that they began slamming carts all over the place.

So the last question: If I want them to QUIT hauling for a while (ie I have enough in my dump pile) is there a way to do that without deleting the hauling paths or removing stone/wood hauling for all dwarfs?

If you forbid the cart while it is sitting on the stop (might not actually need to be on the stop), they should stop putting stuff in it.

That did...but then they started carrying it to the stockpile inside.  So defeats the purpose of ignoring it for a while.  I can set orders to ignore wood and that works.  Can't do the same with stone however because I need them to haul stone from around the fortress to the initial stockpile.
