Dwarves constantly drinking from the river, why?

I have booze in the food stockpile, 30 or 40 units according to my stocks (and my record keeper is talented and set to maximum precision, and does nothing else with his time besides update records).

Sooner or later the dwarves are going to get themselves killed out there, either from wildlife or an ambush. I have a murky pool of stagnant water I made by draining one of the ponds on the surface down into an area of my fort, but evidently that is as unappealing as my booze appears to be.

I'm guessing the booze I have is held in only a few containers, which can only be used by one dwarf at a time, or something to that effect. Otherwise I have no idea why my dwarves are passing up perfectly good booze in favor of river water.

Also, can dwarves even use water from a 2 Z level deep murky pool of stagnant water I made via channeling? And would the 5 Z level fall from the surface kill or incapacitate any hostiles that try their luck jumping down to get into my fort?

This, most likely. 30-40 booze is not much.

That you even have a record keeper at talented means this is not a starting fort. If your population is anything more than 10, 40 units of booze means "we're down to our last drops". Stone pots + herbalism = no reason to have that little (unless this is challenge terrain).

My rule of thumb is to have booze >= 10x my population.  So for 80 dwarves I'd want 800 units of booze on hand.  If my booze supply drops to half that (<= 5x population) I consider it a cause for taking immediate corrective action.

I believe to get 2 Z-levels down they'd need a well to access it. I'm unsure if the water would break a fall such as that, because I've never done it before

The water fills 2 Z levels at a level of 7 units of water per level, and I can see the water right on the level that the pool is accessed from by the path I made to it.

The water drains in 5 Z levels above from a pond, that refills with rainwater.

i'm have a strange bug, booze lying on the still w/o barrels it count toward booze amount but dwarves never use it

I've seen this happen when I was dumping all my wooden barrels to convert them all to rock pots.
