[MARRIAGE:integer] tag

Let us separate when Dwarves start working and start marrying, 1 year old Miner (adorable) / 1 year old Bride (creeeeeeeepy). Some way to separate the two would be nice to have.

Would make sense to have different values for different jobs, too. Like you can probably haul stuff around a lot earlier than you can effectively swing a pickaxe.
Similarly, military training and actual use in combat could use separate ages.

The CHILD tag isn't really when they start working so much as when they hit puberty and become viable for gestation, so you're not talking "working age" so much as "adolescence age".

Clearly you haven't considered sequestering your womenfolk in a gold-plated clothing sweatshop palace and your children in an elaborate rubber wood danger room playpen. But I do think a tag to control the marriage age is a good idea. It would be a powerful tool; castes could be modded to never marry, marry but never work, marry later in life to reduce the rate of population growth for immortal beings... and on that subject, [MENOPAUSE:children:age], a tag to let these poor women retire from their reproductive careers. I set my dwarves to live into the three-hundreds and now everyone comes from a family of eleven kids and the cousins! Oh GOD, the cousins! They'd spend half their lives face-down drunk at wedding parties.
