What happens if your skilled dwarves die? Lower the minimum allowed level? I forsee problems.

Not really, that's literally all you do. Best guy dies lower the level so second best can use it. You can also do different workshops for different skill levels. I like to do one workshop that accepts dabbling to master masons to turn out blocks and another that takes master to legendary. The newbies crank out stone blocks while the vets crank out furniture and the pro's There's no reason my novice masons can't churn out blocks but I don't want them making substandard furniture.

The problem with workshop profiles for me is that the manager assigns jobs to all workshops without care, so if i ask him to assign 100 blocks hell fill up the master workshop along with the noob ones

My system of assigning labour seems to be slightly unique. On immigration/adulthood, every dwarf in one of my forts is assigned to a military squad named something like "haulers" or "masons" or "craftsdwarves"... you get the idea. Every dwarf squad has the same labours (exception being craftsdwarves). I do this primarily because I want them all in leather to avoid discarded socks, and seeing as you always have several dwarves of a certain skillset doing the same set of jobs, I figured what the heck. It also lets me prioritise haulers in my human dwarven wave attacks against the FB that just slaughtered my champion Militia Commander.

Thing is, this would be near impossible very, very boring without Therapist. I'd have to go through a migrant wave, take note of which dwarf I want doing what based on their skills/my needs (while constantly checking back to the military screen to see what my needs are), and then I'd have to go through the squads on the military screen, manually scrolling past hundreds of names for each dwarf I assign, since, y'know, the game takes you back to the very top of the list each time.

What is the point of doing it the vanilla way over using therapist?
The way I see it, DT is a UI upgrade, plain and simple. It doesn't directly affect gameplay in any way, it doesn't turn your cats into goblin-murdering superbeings, it just makes the game smoother and more user-friendly.

Although, despite this small wall of text, I've been playing DF2014 anyway. But still, having Tharapist back would be nice.

It does let you turn on child labor, if you want it to...

Not that i am complaining, i like the option

Never used Therapist :) Though its blasphemy, I do wish Toady would consider some mild "UI" streamlining.. My most hated one is the military screens (handling equipment and such..)

I do miss DFhack,though I found therapist to be redundant as one of the DFhack utilities I had was a pretty decent dorf manager.

Mostly for autodump and clean all though- trees kill my FPS by autumn....

EDIT: Keas restricted to tropical forests where they belong.  Those evil, EVIL, foul little things.
 
Edit: The baby murderer became a friend of the fortress, which started a loyalty cascade, and now most of the squad is dead.

Really want prospect all command. Now I am copy saves and embarking/abandoning ruins to prospect my low ore world.
