So this is something I've been wondering, but I can't find info anywhere. Do bones from different creatures have different properties? Would ammo and armor perform differently depending on what it's made from? Anyone care to enlighten me?.

As of right now bones are bones material and strengh wise.

In the vanilla raws, all bone materials are created directly from the standard BONE_TEMPLATE and thus all have the same physical properties. With custom modded raws, it is completely possible to have every different type of bone have unique properties.

It's amazing how dwarves can make a stack of bones completely waterproof and magmaproof.
It's amazing how they can make an entire floodgate out of the bones of 2 cats.

I believe bones from various creatures retain their base value, though. So they are different in that respect. Not related to armor and ammo, but matters to trading.

A couple vanilla creatures already have modified bones. Dragons, for instance, apply:

[COLDDAM_POINT:NONE]
[HEATDAM_POINT:NONE]
[IGNITE_POINT:NONE]
[IF_EXISTS_SET_MELTING_POINT:55000]
[IF_EXISTS_SET_BOILING_POINT:57000]
[SPEC_HEAT:30000]

Which theoretically make dragon-bone immune to temperature. (Fire imps are a similar exception.)
