What happens if you don't build a Trade Depot?

Do Traders still show up, but then hang around for a while & leave? Hang around until they go berserk? Not turn up at all?

It's a dwarf.  Their natural habitat is "trapped on the wrong side of a wall".

Flinging children halfway across the map to land in magma is good, wholesome fun, but extramarital reproduction?  Why, that's just unseemly!

pretty much yes they hang around for a while and leave, only poking their heads barely on the map edge until a trade depot is built/accesible

Merchants with pack animals will show up and wait at the map edge.  Wagons will not show up; you'll get a message about the wagons bypassing your inaccessible site.  This is also what happens if you have a depot, but it isn't wagon-accessible.

Traders with pack animals will always arrive, if you are reachable by any trading civ. If you have no (unforbidden) depot at all, traders will tell you something like "The merchants need a depot to unload their goods.", in addition to the wagon bypassing note. More importantly, traders coming to a site which has no depot at all will _normally_ fail to leave, but rather hang around until they go insane.

If you have a depot, even if it's totally inaccessible, traders will only give you the "no wagon access" complaint, and the traders with their animals will sit on the edge of the map until the end of trading time, then leave normally.

They will always arrive, complain about not being able to access the Depot, and leave.  Like if you build a Depot but it doesn't provide a 3-tile-wide access to the edge of the map.  For the record, the single trader w/pack animals will show up in above situation.  The wagons wont, and the selection will be limited, but you will get to trade.

I wonder if wagons really bring more items. The trade depot in the current fort has never been accessible to wagon, but the caravan animals always bring more than needed, and requested items (specifically, a pair of alpaca) were brought as well.

Um yes they bring dramatically more items. Like easily 10x more items.

Whether that is "more than you need" is a subjective thing only you can answer, but even if so, it's still just "more than I need" versus "10x more than I need"

Note that your very first year, the wagons might not bring very much not because they're maxxed out but BECAUSE YOU'RE POOR. But once you trade enough to attract full caravans in just a year or two more, the difference is obvious.

Dwarf fortress in 50 words: You start with seven alcoholic, manic-depressive dwarves. You build a fortress in the wilderness where EVERYTHING tries to kill you, including your own dwarves. Usually, your chief imports are immigrants, beer, and optimism. Your chief exports are misery, limestone violins, forest fires, elf tallow soap, and carved kitten bone.

In addition to them bringing more wagons significantly increase the amount they can haul off. on my year 1 tradeing season I often get the depot up just before the caravan arrives.  Sometimes I'm a bit slow and dont have the wagon access in time.  I generaly notice about 50% more stuff on the wagons that first year vs just the pack muels.   However if only the pack animals arrive the caravan has almost no spare capacity for weight.  I have to make sure I'm tradeing high value low weight items which are somewhat harder to come by that first year as few industrys have had time to get off the ground.  With the wagons I can trade away even the crap stone furnature my first mason had been churning out.  In later years when the fortress is richer the wagons bring huge amounts of stuff.
