Pilota <--trailer and buying option within
This may be the game for you. It's a stripped down plane flying game as seen from above. You do have cockpit instruments and there's even a mission that involves flying at night using almost nothing but your instruments. You can fly planes and helicopters, which you have to buy, that are used to do missions. Missions include air races, crop dusting, fire fighting, cargo delivery, air ambulance, etc. It's all done on one map so you fly to your missions. It has a 3D mode if you're into that kind of thing.

There are a bunch of aircraft with different unlocks. Some money, some hours of flight, some passengers or cargo delivered, secret ones found on the map, and even a parachute that you unlock through crashing a plane.

On screen text does seem small and hard to read. Controls are pretty sensitive and there's not much sound to speak of. Buy on Desura only right now.
