How do you use coded words?

How do you use word codes like the chain and tree from DF, stuff like that?

(Some of these may show up as boxes or question marks for certain fonts (although the ones listed on that webpage are the ASCII symbols and they should in theory work for all fonts), and some things may require you to use other things than alt + numbers. I'm not an expert myself)
