Big animals

Does every species of wildlife occur?  Does a thing like extinction exist in df?

I'm in a savage tropical forres/shrubland/grassland biome.
I have killed probably 100 birds and bird mans.. and a few others. 
But I want to see (giant) tigers and elephants..  I have not seen one in years.

No, you don't get every species of biome-applicable wildlife in an individual embark. And extinction does exist, but you usually have at least a dozen or so creatures of a species before they go extinct in the biome. More plentiful species take much longer to extinct, but unfortunately that mostly applies to boring stuff like giant lice or cavies.

To see tropical wildlife, you might have better luck trying out a non-savage biome. Those are less overrun by animal people and giant insects, so more opportunities for big game to spawn.

too bad truly awesome creatures, like giant tigers or giant desert scorpions only spawn in savage areas.

Specie occurrence is noted in the raws with the FREQUENCY token. the lower it is, the rarer the creature. giant desert scorpions have a frequency tag of 5, making them exceedly rare. Note that the highest frequency value is 100.
