Cage traps have allowed me to capture the first goblin Snatcher... either kobolds are dead in this realm or very stealthy.
What should I do with them? Sure, stabbing it (her?) will be kinda OK for training, but I also have a legendary grave ready that will need decoration...

Or, if there's something particularly dwarfy that anyone can suggest, try me.
I've never done it, but apparently they can be stripped of all weapons, armor, and equipment, and used for wrestling training or used as a detector/pressure-plate-user for crazy logic driven schemes.

I have three now. Still want a relatively simple solution- one is missing a leg. Wrestling may work.

Armor is a slight problem. I'm left constantly wondering if I need to give more armor to a dwarf, what can stack and what can't, and what materials I should be using where.

Assuming I have a military force of 10 dwarves, 2 of which are marksdwarves, enough iron to craft a weapon and one unit of armor per category for 4 dwarves and enough copper to give one armor per category and a weapon to each dwarf twice over, what do I build? Should I give everyone a single iron breastplate and some iron weapons and let everything else be copper? Can I stack, say, leggings and greaves? Chainmail and breastplates?

you build a helm, a mail shirt, a breastplate, greaves, boots and gloves. No need to stack yet. it will come to you later, because while your dwarves are weak stacking will only slow them down.

So you have 44 iron and 220 copper, in this hypothetical scenario? Assuming its all edged weapons (use copper for blunt weapons, unless you have silver), I would do:
Iron helm for all (10 iron)
Iron weapon for all (10 iron)
Iron mail for all (20 iron)
Copper breastplate for all(30 copper)
Copper leggings for all (20 copper)
Copper gauntlets for all (10 copper)
Copper high boots for all (10 copper)
If you have leather make them all leather cloaks (10 leather)

Total: 40 iron and 70 copper used, optional 10 leather.

All right. I figured I should protect the head and body as much as possible. I didn't have leather set up the second time, but the first go-around was dependent on it.

you got it wrong. You must protect whole dwarf as much as possible, as usually the first injury leads to an almost certain death: A bruised bone -> dwarf in pain, so his rolls are much worse -> chopped off limb -> dwarf is on the ground and is bleading and can give in to pan -> headshot. If some part of the dwarf is exposed - it will be loped off before the headshot through whatever is on his head.

Yes, but an unconscious dwarf means enemies always try to headshot, and if the enemy can't penetrate their helm, they will survive. Thus, better headgear is the most important piece of armor, even if only because an unconscious, well helmeted dwarf will distract a lot of enemies.

However, I agree:  if you have time, it's better to have a few well armored well trained dwarves, than several poorly armored and trained dwarves. However, if the enemy is camped just outside your gates, and they might charge any minute, my setup here

would be best.

You can keep children safely in burrows if you include beds.  Except for a few, like the ones with the "loves a good thrill" trait, the kids will generally stick to the burrow instead of following their mother and/or wandering around outside.  Just make sure that the burrow includes a dining hall and clothing stockpile.
