If you want to buy stuff instead of stealing it all, I suggest looking for a backpack to buy first, or at least a bag.  Failing that, anything at all wearable will help you build up your portable net worth so you can buy the waterskins and backpacks later.

If you drag a beast corpse into the shop, you can butcher in there and then sell all the parts without having to run back and forth carrying one piece at a time.

If you don't mind making a new world, then you can use the Wanderer's Friend Mod. It puts in a whole lot of different crafting recipes for adventurers. Then all you'll need is a dead animal, something sharp, and some rocks.

Bags hold more water - why would you want to use a water skin?

Grab two bags from a human village. One bag is full of berries. Empty out the other bag, and fill it with water (~40 IIRC). Travel supplies done!

Because a bag filled with water weighs around 29 kilograms, which can be enough to slow you down significantly if you're already encumbered by armor.

Empty out the other bag, and fill it with water (~40 IIRC).
An empty bag holds 50 units of water.

P.S. If you don't get this note, let me know and I'll write you another.
It's amazing how dwarves can make a stack of bones completely waterproof and magmaproof.
It's amazing how they can make an entire floodgate out of the bones of 2 cats.

Backbacks, barrels and buckets can also be filled with water.
