Starting Attributes and Advanced Vampomancing Questions

Hello,

I just "finished" my first real game in Adventure Mode. My Vampire/Necromancer/Swordmaster did somewhat well, but I went overboard and the world I created is too large with too little content, plus the caverns are basically empty, so I feel a new game is in order.

I would like to plan ahead this time which means some basic questions:

As far as I understood, becoming a vampire will double your STR, AGI and TOUGH but for me all 3 were super[race] at the transformation. Does this mean no bonus at all, or will it simply be added to the numerical value of the attribute and there are no tags beyond super[race]? And if we're already on that, is there a DFHack command for displaying said value?

This game I started as a demigod. I would like to switch to hero or peasant, but the attribute limitations threw me off. Can I modify the raws to rectify that?
After a bit of searching I came across this entry:

     [PHYS_ATT_RANGE:STRENGTH:1250:1500:1750:2000:2500:3000:5000] 
     [PHYS_ATT_CAP_PERC:STRENGTH:5000:NONE:NONE:NONE]

If I were to put this under the relevant race in the creatures_standard raw, will this allow my peasant to level to super[race] and beyond?
