How can you get giant cave spider silk? Is there some trick to it, or is it just really really hard to come by?

It is, actually, very easy to come by.

The first thing you need to do is to find the cave river, the spiders make their webs there regularly. You will also need to build a loom in order to gather and process the webs to make silk thread. These tasks should automatically appear on the loom's job list if there are any webs around.

Only you need giant spiders instead of normal ones. They are chasm monsters.

Well, that much I knew. Thing is, I've never seen a giant cave spider. Are they more likely to appear if I mine out more stuff along the chasm, or anything like that?

They are harder to find because they don't attack directly.  They lay large multi-tile webs across the chasm.  It's not a sure thing that you even have them in your fort, but you can try exploring with some tunnels and small bridges up and down the chasm.
