Flying zombie goose skins.
When this happened to me the skin didn't fly. I imagine a creature with [FLIER] that doesn't have wings would fly in skin form.

I am fairly sure I have seen "zombie raven animated corpse" that was little more than a left foot, flying around.

Geese have the flyer tag, but perhaps the game treats it different because of the benign tag?

Or perhaps it just couldn't fly indoors?

Animated corpse "collapse" triggering weapons in decreasing order of power:

Crossbows (1 hit if metal bolts, 5-6 hits if wood bolts)
Whips (1-2 hits)
Hammers/Maces (3-4 hits)
Battle Axes/Short Swords (5-7 hits)
Spears/Punching (8-10 hits)

Melee weapons take fewer hits if the user is strong and skilled in the weapon. Numbers above are quoted for testing with unskilled dwarfs. The weapons with higher velocity modifiers are better, for poorly understood reasons relating to momentum. Crossbows are better because even a grazing hit from an unskilled dwarf will put down the animated corpse, so no training is required.

Bringing giant birds with you and breeding and butchering them in the deepest parts of your fortress is another option.

Try incorporating the reanimating skins into your military training regime. It'll be like chasing, I mean fighting, animals for weapon and fighter skill, only they won't run.

I found a human city named Sleevevirgins. It was easily the biggest city in the world, so clearly I wasn't the first person to come inside the city's walls.
