Most likely you walled him in somehow, check the stairs, ramps, etc. If he is already hunting vermin then you'll need another miner to free him by digging an alternate route.

He probably can't find a path to the nearest barrel full of delicious edibles. If there actually wasn't any food to be found he'd start hunting for vermin instead.

Another frequent cause of this is not understanding how stairs work, leaving the miner stranded somewhere. The wiki's page on stairs is good.

You probably dug around a Ramp so that it was no longer usable... Ramps need one solid block of stone adjacent to the lower level in order to function properly.

He might have also used ramps instead of stairs and dug down more than one space and couldn't get back up... I did that before I found out about the wonders of stairs
