Making steep cliffs / canyons

How do I make a map with a lot of steep cliffs or canyons?

An embark site where two rivers join together will often have sheer cliffs. There will probably be water at the bottom, though.

embark half on a mountain biome.. tab over to the elevation/cliffs display. I'm sure you can do stuff to worldgen parameters, but for finding a single embark with cliffs it doesn't seem necessary, you can find some extreme cliffs with a vanilla world.

in advanced world generation, turn 'periodically erode sharp cliffs' (I think that was what it was called) off and it gets a lot easier to find cliffs
