I don't think you actually can in this release. Committing any crime at all will cause the entire entity to instantly know who you are and what you did, and they will immediately turn hostile and attempt to kill you on sight.

Fortunately, sucking the blood of random wildlife works just fine.

A suggestion (if it works) is to find an ocean coastline and find you either a normal or horseshoe crab. Horseshoe crabs are really slow and weak which makes them easy to catch, though they try to run for the water as soon as they see you.

Get some kind of blunt object and bash a hostile creature in the limbs until it passes out from pain. Problem solved!

Though I always just snuck into towns at night ad fed off of peasants. I was never caught.

I haven't had any problems with getting detected when sucking blood. O_O

Anyways, try sneaking into town at night and make sure everyone's asleep. Otherwise you can simply break some limbs using wrestling and suck their blood when they give in to pain.

Just strangle a goblin or bandit or somebody no one will miss, then feed on them while they're unconscious. You can drink blood and earn the admiration of your peers at the same time!
