So will the dwarf with the broken spine recover and use a crutch?

Dig a small system of winding tunnels, isolate it from the outside world - only access is a floor hatch for dumping creatures in. Let the minotaur room it freely. Prisoners/criminals/sacrifices are thrown in and mauled by the monster. Maybe include a lever that can be pulled to open an escape route once the minotaur is dead. Dump some strands of red-dyed wool in the corridors for flavour.

Indeed.  Bonus points if you can somehow copy the topology of the maze of twisty little passages from "adventure" (the text adventure.).  double bonus if you can toss in a coin and a vending machine based on minecart logic.

Minotaurs aren't night creatures - they're semi-megabeasts.
