If you're into details, Falcon 4 with either FF6 or BMS also makes a very good choice. And so was DCS if you have some bucks to spare. Be warned that these stuff are among the most complex on this planet -- not unlike, and maybe more so than DF.
If you just want some arcade, HAWX is also good.

Planetside 2 dogfights with the fighter planes seem nice.
(at least from the ground. When i tried to fly a reaver i landed upside-down in a cliff)

Appreciate all the suggestions folks. Keep 'em coming if you got them. (Now I just need to find the TIME to d/l try all this stuff!)

On the scale of Arcade to Realism I think I fall in the middle. I don't want balls to the walls simulation, but I don't want a trivial arcade shoot 'em up either.

I guess if I really want to take this seriously at either end of the spectrum, I needs to get a joystick.
