Well, I found an entertaining way of doing garbage disposal. One might even say !! FUN !!.

This assumes you are familiar with a dwarven atom smasher. When you make the garbage pit to dump stuff, channel the hole first.
You can build the bridge for trash compaction over a ramp, so leave the ramp there.

With the ramp there, occasionally dwarves will wander onto the ramp while dumping garbage to below, so all their peers will rain refuse on their head. You will likely have multiple casualties from discarded mussel shells.
