Gems are for encrusting to make things look prettier at a jewelers: http://dwarffortresswiki.org/index.php/Gem

Lag happens, especially when using a large area. DF is the greatest stress test on your computer. There will be lag, and there will be a lot of it.

You do not understand the ways of Toady One. He is not a business, he's just a guy trying to make a fun game. He's invited people to come along and experience the journey with him (and help him test it out as he goes along). At the end of the day, I don't think his main goal is to sell Dwarf Fortress, its just to create the best game possible.

Considering the second, depends on what word 'large' means, there were several reports of freeze lags on embark sites that exceed certain size. Those lags are caused by the limits of 32-bit architecture or something, and cannot be ridden of for now.
Try using smaller areas, if I recall correct, 4x10 works fine on sufficiently powerful processors (just like yours).
