High ceilings, any benefit?

Is there any benefit to creating rooms with high ceilings over low claustrophobic tunnels?

Not really. Dwarves don't get claustrophobia - it actually helps them navigate in dark tunnels, where their beards extend to trace the walls and roof.

Moria is thus a fantasy. That giant pillared chamber was quite dramatic though.

Well high ceilings are beneficial for swimming pools. 7/7 water without an airspace above it will drown even swimmers / animals capable of swimming.

They're good for allowing flying forgotten beasts and titans to decimate your butthole so we get to explain to you that no, your tall rooms don't do anything good, and yes, you are going to have to build multiple z-level high walls to seal them.
