They were broken in 0.31. Then they were fixed again in 0.34.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

Just make sure you have an accessible depot and you should get wagons along with each caravan.

 Hit 'D' to see if there are access issues.

The only potential issue with staying down in the caverns is the cave-adaption issue and the resulting negative thoughts from going back up to the surface.  It's not a reason not to, but you'll need to have plans to deal with the issue.

Personally, I build my fortresses between the cavern layers.
