not how to force certain prefs.
I am NOT talking about forcing certain prefs. To put it in a dwarfy way, I want them to have the capability to go insane. How they will do this IS GIVING THEM THOUGHTS. How do I give them thoughts like dwarves? How do I make them have emotions?

CyberUrist, you don't have to do anything. If they are an intelligent race they will automatically pick certain things they like and certain things they don't like. It's all done randomly. You have a very small amount of control with things like the prefstrings and the personallity tokens, but other than that you don't need to do anything to have your race have thoughts.

Really? Just giving them [INTELLIGENT] will work? Thanks!

You're being really confusing here. What do preferences have to do with them being able to go insane at all? You're mixing up a lot of different concepts here, so it's hard to tell what you actually want.

Prefs have to do with thoughts, mainly because they cause them. Also in an entity file I found such things as [GEM_PREF]. What's that all about?

....[GEM_PREF] = race will trade gems... Not sure if thats what you want?
It's an entity tag, so it's not gonna make a creature go all "Ohhh Shiny!" and be happy,
nope just lets them bring gems to trade/embark with if they have access to it.

same with [STONE_PREF]
and [METAL_PREF]

but if an entity lacks [STONE_PREF] they won't use stones/ores, thus no melted metal. But due to reactions to make alloys they will bring alloys

"melted metal" means melting native copper to copper
so no [STONE_PREF] means no copper, but [METAL_PREF] will let them bring steel (if they have a reaction to make steel bars)

You'll probably find your answer on the wiki under "Soul Attributes"

In fact, pretty much everything you're asking will be answered on the wiki. I used very little help other than the wiki and some extra help on the forums for body tokens. If you want to know what a token means, just go to the article on that type of token. Here's a list:

Creature tokens
   Body tokens
      Bodygloss info
   Body Detail Plan tokens
   Tissue tokens
   Skill tokens
   Creature variation tokens
Entity tokens
   Position tokens
   Unit Type tokens
   Ethic tokens
   Language tokens
Biome tokens (Can be considered a subset of both entity and creature tokens)
Material definition tokens
Inorganic material definition tokens (I.E can't be attached to living things)
Item definition tokens
   Ammo tokens
   Armor tokens
   Tool tokens
   Trap component tokens
   Weapon tokens
Reactions
   Building tokens
   Item tokens
   Labor tokens
   Material tokens
Interaction tokens
   Syndrome guide

Prefs have to do with thoughts, mainly because they cause them.

Rarely. The vast majority of thoughts, good and bad, have nothing to do with food/material/animal preferences.

I tend to prefer pointing to the category itself (modding) though a half page of links works as well. :P

Also if you want a little help looking up various definitions when you encounter them I suggest maybe downloading this. It's still being worked on right now so any raws that you export from it don't come out looking very pretty, but it does include the definitions for most of the tokens, argument lists for the ones that have to have certain things put in certain places, a nifty workshop builder and can help to steer you in the right direction.

Are you playing this custom race in fortress mode?  Thoughts/preferences and the ability to go insane only apply to creatures which are members of your fortress.  If the race is intelligent and is the race you are playing, you will see these thoughts and preferences when you examine them.  Otherwise, you won't.
