Cut gems + Restricted stone

A lot more stuff is available in the Cut Gems menu.  Does restricted stone showing up on the menu mean that cabochon versions of the iron ores can still be used to make iron for example?

No. Toady probably left restricted stone in the gem menu, because unlike other places where stone is used, the gem menu allows you to pick the particular stone yourself. That or he didn't think of restricting it.
