In short, my hunter isn't hunting them.

I think this is because giant flying squirrels are based from the entry for flying squirrels, which are vermin.

If they're GIANT flying squirrels, large enough to be used as mounts, you'd think they'd have enough meat on them to be worthy of hunting, right?

I think I may have identified the problem.

This is a 34.07 embark.

Despite the fact that my hunter clearly has Ambusher as his highest skill... no crossbow.

Perhaps this changed in the newest version?

it was announced to be changed, but there was some trouble with the itens nigrants and embarkers took with them.

Turns out that Giant Flying Squirrels can be hunted.  It's just that my hunter didn't get the free crossbow on embark.

note that while flying creatures can be hunted it is possible that they fly so high your hunter can't reach them, you will then get a lot of 'Urist McHunter cancels hunt, can't find path' job cancellation spam.
